At 40 years old, Tiago T. Lopes brings a wealth of experience to the bartending scene. Originally from São Paulo, Brazil, he first discovered bartending before moving to Dublin, Ireland, in 2009. In Dublin, Tiago had the pleasure of working in various esteemed venues—currently placed at Docker’s Bar, Dublin—transitioning from bartender to bar manager. His journey in Ireland, known for its legendary pint of Guinness and renowned hospitality, has shaped his approach to the craft. In this interview, Lopes discusses his inspiration, the skills that define a great bartender, and what he loves the most about his job as a bartender.

Why did you want to become a bartender?
Funny enough, what initially attracted me wasn’t the flavors or the nightlife but the history behind the brands and the meaning of their names. I was fascinated to discover how deeply connected beverages are to everything around us. And this curiosity is why I joined the profession.
What are some of the most important skills for a bartender?
Listening is crucial, especially when stepping into a new role. It’s important to not take everything for granted; instead, take a step back and listen to whoever is in charge. This doesn’t make you appear less capable; it shows humility and a willingness to learn more in the field.
What's the best part of your job?
The best part has got to be listening to people’s stories—especially the kind of stories they wouldn’t tell their therapist!

Please share some tips to increase beverage sales in a bar.
Well, it all comes down to staying up to date with new food trends. What is innovative in the kitchen often becomes trendy at the bar! Learn to read the trends and implement them in the bar program, the sales will follow.
What do you love hearing as a bartender?
“Oh, thank you for the company; I feel better now.” I believe it's one of the best compliments a bartender could get.

How can a customer get your attention in a crowded bar?
The best way to get my attention in a bar would be to wait your turn without shouting or waving down is best. Bartenders know who is next, believe me!
What is your go-to "surprise me" order?
I’ve been playing with simple highball serves lately, like pineapple rum and tonic with orange bitters or smoked whiskey and soda with peach bitters. They’re simple, boozy, and refreshing—perfect for high-volume bars!

Name three bars that you admire and why.
I admire The American Bar, Connaught, and Oriole. The first two are classic cocktail minimalists and hotel bars, which I personally like. Oriole is extravagant and vivid. They all guarantee a positive experience.
