Nathaniel Wallner began his restaurant career working at Chef David Kinch’s bib gourmand restaurant ‘The Bywater’ in Los Gatos, CA. Developing his skills there, he developed into the role of Bar Manager, maintaining an exacting focus on guest experience, cocktail development and staff education. Eventually moving forward to work at Chef Kinch’s restaurant ‘Mentone’ in Aptos, CA, where he has worked with the Bar Director to maintain quality, efficiency and continued growth behind the bar.
